Food Matching Note:
Excellent on its own or pair with Corsican classics such as grilled fish, rabbit, or goat's cheese.
Tasting Note:
Medium lemon yellow with green glints in the glass. On the nose there is a refreshing apple aroma with lemony notes. On the palate there is a mineral freshness combined with a ripe fruitiness and considerable body and texture.
Vinification Note:
This wine is made exclusively from Vermentinu, which is usually known under its Italian name of Vermentino, or Rolle in French. Only organic composts are used. The grapes are hand-picked and given a short skin contact maceration before being racked off into the fermentation tanks, inoculated with specifically Corsican yeasts and cool fermented for 15 to 20 days. Maturation is on the lees, with bottling 5-8 months after harvest.
