Food Matching Note:
Great on its own, but also a good partner to shellfish, tomato dishes (anything from salads to pasta) and charcuterie platters.
Tasting Note:
At the blue/violet end of the rosé spectrum thanks to the Sciacarellu influence, this wine is vibrant and fresh in the glass and has a powerful fruity, herby nose reminiscent of the scrubland around the vineyards. In the mouth there is the trademark minerality and acidity of the granite terroir and a refreshing finish.
Vinification Note:
This wine is made from Sciacarellu and Nielluccio blended with a little Grenache which have all been on the island for centuries. The grapes are hand-picked, crushed, and the must is obtained partially by taking free run juice and partially by pressing to extract some colour. There is a short period of cold settling before inoculation with specifically Corsican yeasts and cool fermentation around 20 days. Maturation is on the lees, with bottling in the early spring.
