Food Matching Note:
This is a lovely juicy, fruity wine, excellent on its own. But wil also pair nicely with charcuterie, grilled meats, pasta dishes, pan-fried liver with sage and cheeses.
Tasting Note:
A lively and bright ruby colour, this wine has powerful red berry, herby aromas reminiscent of the scrubland around the vineyards. In the mouth it has a delicious juicy freshness and soft tannins with a touch of minerality.
Vinification Note:
All the grapes are completely destemmed before undergoing temperature controlled fermentation with a period of maceration lasting between 8 and 12 days.
Detailed Vinification Note:
This wine is made from Sciacarellu and Nielluccio blended with a little Grenache which have all been on the island for centuries. The estate totals 24 hectares and is divided into several south-facing plots, all growing on Corsica's characteristic granite soils which impart a firm purposefulness to the wine. The vineyard is regularly ploughed and hand-weeded with no recourse to insecticides. Only organic composts are used. The vines are between 10 and 30 years of age and yield sparingly, especially in years of water stress, which can be a problem on these stony hillsides. The grapes are hand-picked, de-stemmed and cold-soaked for several days before a natural fermentation without inoculated yeasts at around 24-26 C for 10-12 days. Extraction is achieved through a mixture of remontages and pumping over. Maturation is on the lees in stainless steel, with bottling in the early spring.
