Tasting Note:
With an expressive nose of peach, mango and candied rose petals, the wine has a long, full mineral-rich mouth.
Vinification Note:
Umani Ronchi's Pecorino project has been created to celebrate the native white varieties of the Adriatic Area. The vineyards are in the district of Chieti in the Abruzzo, and are on predominantly clayey-sandy soils. The grapes are vinified by pressing gently, rapidly cooling and settling the must. Fermentation happens in temperature-controlled steel tanks between 16° and 18°C, and it goes on for 10-15 days. The wine does not undergo a malolactic fermentation and is kept in steel for about 4 months on its fine lees.
