Food Matching Note:
A deliciously juicy aperitif or excellent with white meat and fish, such as tartare of Salmon with shaved radish, coriander and green apple salad.
Tasting Note:
Bright golden yellow with an emerald tinge, this fresh Chardonnay from the South West tip of Australia is fruit driven with luscious tropical fruits, such as pineapple and white nectarine, and a good slice of lime to keep it crisp and mouthwatering. Named after the indigenous Boobook owl native to the Carri forrest in this area of Australia.
Vinification Note:
Harvesting was done during the cool nights of vintage to keep the fruit in good condition and preserve its fresh flavours and aromas. Pressed with enzyme to unlock varietal flavours from the skin and allow a gentle but quick pressing process. Fermented in stainless steel, the juice was kept between 15-18 0C to ensure a slow ferment (to allow the development of desirable flavours and aromas). Two different yeast strains were used as the flavours and mouth feel they create are different and favourable for this varietal. Micro-oxygenation was induced half way through fermentation to help the yeast produce clean vibrant flavours. Post fermentation, the wine was racked off lees to preserve its clean and crisp characteristics and prepared for bottling.
