Ageing Potential:
Cardamon and pepper crusted quail with wood roasted cauliflower, prune and ginger dressing.
Tasting Note:
Complex red and blue berry fruit aromas with black pepper and underlying hints of liquorish and dark chocolate. Mixed berry flavours carry through onto a generous palate with subtle savoury and earthy notes of leather and tobacco leaf. The mouth feel is fleshy and softly textured with fine dusty tannins supporting an elegant and flavoursome finish.
Vinification Note:
As 2007 was a very good year for reds, the fruit potential with tannin ripeness was at its best. The season allowed full ripening of the skins providing great potential to work with. The fruit was de-stemmed and crushed into 8 Tonne fermenters and pumped over with aeration twice a day. The juice was fermented at around 25 degrees Celcius, then allowed to warm up for a long post fermentation maceration. The wine was then transferred in barrel for its malo-lactic fermentation, allowing a soft integration of the grape and wood tannins. After 12 months maturation in 20% new French oak, the wine was fined with white eggs prior to bottling.
