Food Matching Note:
Salt and pepper crusted fillet of saddleback cod, crisp kifler potatoes and salsa verde.
Tasting Note:
Lifted aromas of fresh white nectarines, apricot with lemon rind notes with underlying nutty aromas. Vibrant stone fruit and delicate citrus flavours carry through onto the palate with subtle hints of roasted nuts. The oak is perfectly integrated, lifting the mouth feel to a lingering spicy finish.
Vinification Note:
The 2008 Chardonnay fruit was hand picked in pristine condition. The fruit was refrigerated overnight and whole bunch pressed to allow gentle pressing. The juice was then transferred directly into Burgundian oak barrels and temperature controlled to ensure a slow fermentation process. This allows for the development of more complex flavours and seamless oak integration. Post fermentation the lees were stirred gently once a week until the balance between oak, lees and fruit characters was achieved. Maturation in new French oak barrels for 6 months. Malolactic fermentation was not carried through so the vibrant natural acidity was preserved. The wine was fined with isinglass just prior to bottling.
