Food Matching Note:
Delicious with grilled prawns or fried calamari and dishes containing fresh vegetables like aubergine and courgette.
Tasting Note:
Luscious aromatic white wine with a rich structure and a very Mediterranean character.
Vinification Note:
Harvest begins towards the end of September lasting through to early October. Fermentation is in stainless steel fermenters at 16-18°C for 15 days. The wine doesn't go through malolactic fermentation and is matured in stainless steel on the lees for 4-5 months, then in the bottle for 4 months.
