Food Matching Note:
Beautiful balance of acidity and tannins which are the perfect match for bistecca alla Fiorentina.
Tasting Note:
Rich, balanced and contemporary without excesses of wood or extraction. The palate attack is intense and backed up by a rich weave of tannins, fresh acid structure and balanced alcohol.
'Funky' Tasting Note:
This is philosophical wine. The label paraphrases the Confessions of St Augustine: "Time does not exist. It is merely a dimension of the mind. The past does not exist becuase it is over. The future does not exist because it is yet to come and the present is merely a non-existent instant separating past and future". This knife-edge of existence is now, contemporary. In Italian it is "Coevo". Presentist or not, this wine still has a long finish.
Vinification Note:
The Cabernet and the Sangiovese are from Cecchi's Chianti Classico estate, whereas the Merlot and Petit Verdot are from their vineyards in the Maremma. The former are on alcaline soils at 250 metres above sea level, and the latter are a mix of sandstone, quartzite feldspars and martime fossils at 200 metres. Vine density is 5000 plants per hectare and the cordon trained, hand-harvested vines yield less than 30 hectolitres per hectare. Relatively restrained fermentation temperatures of 26-28C are combined with two to three weeks of post-fermentation maceration and oak ageing in barriques and tonneaux for 18 months. The wine is then aged for a further year in bottle before release.
