Great for apéritif or as a match for starters, fish, shellfish and fresh cheeses.
Tasting Note:
Starbright and pale lemon yellow in colour with a citrussy and tropical fruit nose. Pure and lively in the palate with dried apricots, honey and wild herbs on the finish.
Vinification Note:
From partner vineyards in the Languedoc at 30 metres above sea level on calcareous soils. The vines are wire trained to produce 45 hl/ha and are machine harvested. The grapes are brought to the winery and are hand sorted before destalking and pressing. The must is cold settled and then fermented at around 15C. The wine is matured in stainless steel for five months and bottled in March.
