Food Matching Note:
A lovely aperitif and also perfectly suited to fresh, simple shellfish dishes.
Tasting Note:
A light gold colour with a very fine mousse. Chardonnay dominance brings crisp fruit freshness and toasty notes; whilst the two Pinot’s add depth and character. Drink now or age for the next few years to let the brioche flavour develop further.
Vinification Note:
Hand picked followed by whole bunch pressing conducted with respect to the must separation as stipulated by and within the CIVC permitted limits. Alcoholic fermentation with yeast specially prepared by Institute Œnologique de Champagne. 100% malolactic conversion, (MLF). 8 months maturation in cuve. This release is made 24 months post harvest.
