Food Matching Note:
Will compliment medium bodied, complex flavoured dishes such as braised meats, lamb shank, coq au vin or rabbit would be ideal. Will show excellently with mature soft cheese.
Tasting Note:
Heaven scented nose of ripe, fresh crushed raspberries and morello cherry intertwining beautifully with earthy, mushroomy aromas. The palate is medium bodied, complex and exceptionally lengthy, displaying a divine balance between ripe fruit, touches of new oak and its well-defined structure. The finish is firm and lengthy, a seriously sexy wine with enormous appeal.
Vinification Note:
The grapes are sourced exclusively from the premier cru vineyard 'Les Greves. The grapes are all hand harvested and sorted before destemming and light crushing in a small pneumatic press. Fermentation begins in wooden open top fermenters before the wine is transferred to a selection of new and used French oak barriques where it completes alcoholic and malo-lactic fermentation. After racking, this wine is bottled without fining or filtration.
