    The wine reveals all the fullness of expression of the Special Cuvée to the nose. All Bollinger is there: presence and modesty, power and delicacy. And yet other notes come to the fore in the mouth: small wild berries in the countryside on hot summer afternoons. Raspberries, blackberries, gooseberries — the first note of acidity is jolted by the sensuousness of the flesh. An impertinent flavour dances in the mouth, but the lively, joyous sparkle of the fruit is always contained by the wine’s precise structure, which gains in fullness and climaxes with mellow notes that stay on the palate and resound in the memory for a long time.

    A beautiful gold colour with hints of bright and deep yellow. Fine bubbles feed a delicate cordon. Aromas of candied cherry, peach, dried fruit and lemon confit dominate the nose. The palate builds up with elegance to a lingering, fresh, creamy and delicious taste.

    Pale, brilliant yellow in colour with silvery highlights, the bubbles are fine and form a lasting and delicately creamy ring of mousse. The nose is subtle and fresh, the initial mineral aromas quickly develop into green, floral scents with hints of elderflower and spicy cinnamon overtones. On the palate, its flavours are dominated by intensive fresh citrus fruit. These then give way to a much fuller, well-bodied and mellow taste with flavours reminiscent of white peaches in syrup. The finish is long, rich and extremely expressive.

    On the nose the aromas are delicate and with a subtle nuances of wood, but there is great underlying depth. On the palate it offers a lively, clean but balanced first impression. It is fine and lean yet displays excellent length. Flavours of candied citrus fruits predominate, but there is a balanced touch of nuttiness.

    Using only the highest quality Pinot Noir grapes, this is one of the few rosé champagnes that is made by drawing the juice from black grapes in the vat, instead of simply blending red and white wines. This gives it the highly expressive bouquet, extraordinary depth and freshness, and delicious red berry flavours that have made it a benchmark for all rosé champagnes around the world.

In all, Les Folies de la Marquetterie is a full-flavoured, harmonious champagne distinguished by its immense richness and complexity.

    Delicate pale pink rose colour. The nose sings with cherry drops, raspberry and violet. The palate is structured with very faint tannin and lots of red fruit and fresh acidity. The finish is a long with a savoury, pleasantly bitter note, suggesting that it would be great with food.
